Ingredients
- spinach leaves shredded – 6 cups
- corn starch – 1/2 cup
- oil – for deep frying
- oil – 2 tbsp
- ginger chopped – 3/4 tbsp
- garlic chopped -3/4 tbsp
- green chilli chopped – 1no
- red chilli chopped – 1 no
- soya sauce – 4 tbsp
- vinegar – 1 tbsp
- sesame seeds – 2 tbsp
- salt – to taste

Take the clean shredded spinach and place it in a bowl. Sprinkle with corn starch and toss it gently to coat it evenly. |

Heat oil in a deep pan and add the spinach to the hot oil. Cook till the spinach turns crispy, this will take not more than a minute. |

Remove and place the spinach on an absorbent paper. In a seperate pan add 2tbsp oil, garlic, ginger, green chilli, red chilli and saute them on medium heat. |

Add soya sauce & a dash of vinegar. Give this a quick stir and then add the spinach to this. Toss it gently for 15seconds. Sprinkle sesame & salt, Toss again and serve it hot. |
