Once it is thick where it is coating sufficiently on the back of a spoon turn off the heat. Blending at this stage which is just before freezing will incorporate some air into the ice cream mixture making it lighter and creamy. Pour the mango ice cream mixture into a freezing tray and place it in a deep freezer till it solidifies. Remove and scoop out the home made ice cream into bowls. Garnish with freshly cut mango and mint leaves and serve frozen. |
