Ingredients
For Vermicelli
Aashirwad Ragi Vermicelli (आशीर्वाद रागी सेमियाँ) – 1 cup or 60 gms
Water (पानी) – for soaking
Oil (तेल) – a dash
For Tempering
Ghee (घी) – 2 tbsp
Mustard seeds (सरसों दाना) – 1 tsp
Dry red chilli (सूखी लाल मिर्च) – 2 nos
Chana Dal (चना दाल) – 1 tbsp
Urad Dal (उड़द दाल) – ½ tbsp
Peanut (मूँगफली) – ¼ cup
Green chilli, chopped (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 2 tsp
Curry leaf (कड़ी पत्ता) – few sprigs
Onion, chopped (प्याज़) – ½ cup
Beans, finely chopped (बींस) – ¼ cup
Carrots, grated (गाजर) – ⅓ cup
Capsicum, chopped (शिमला मिर्च) – ⅓ cup
Salt (नमक) – to taste
Green Peas (हरा मटर) – ½ cup
Coriander chopped (ताज़ा धनिया) – handful
Lemon juice (नींबू रस) – 1 tsp

For ragi semiyan upma, the first step is to set up the steamer for the vermicelli. Soak the vermicelli in water for 2 to 3 minutes. Brush a little on the base of the steamer, pick up the soaked vermicelli gently, and place it on the steamer carefully. If you don't have a steamer, you can use a mesh and cook it in a pressure cooker. Let it steam for 5 minutes. |

n a hot pan, melt some ghee, sprinkle some mustard seeds, dry red chillies, chana dal, and urad dal. Roast them a little, then add peanuts, green chillies, ginger, and curry leaves, then give it a nice toss. Let's add the veggies. Drop in onion, beans, and carrots and toss them. Sprinkle some salt. Drop the vermicelli in and sprinkle some more salt, then toss them. Add green peas, then mix everything by lifting and dropping. |

Sprinkle some chopped coriander towards the end and squeeze a lemon wedge. Our Ragi semiyan upma is ready to be served. |
