Til Bhugga – is a classic Punjabi winter recipe using just 3 key ingredients. Khoya, sesame and sugar or gur. It is eaten around Lohri Celebrations and Makar Sankranti. It is super easy to cook and takes about 15 mins to get ready. Til Bhugga has a sweet nutty tasty with a creamy texture along with a light crunch from sesame seeds.
Note – Makes 700 gm (18 nos)
Ingredients
Sesame (तिल) – 1¼ cup (175 gms)
Sugar (चीनी) – ¾ cup (150 gms)
Mawa (खोया) – 400 gms
Black Cardamom (काली ईलाइची) – 4 nos
Almonds, halved (बादाम) – handful

Heat a pan over medium heat. Add sesame seeds and roast them. Keep stirring continuously to prevent burning. Once roasted, transfer the sesame seeds to a plate and let them cool. Grind half the roasted sesame coarsely. Then mix it with the roasted sesame seeds kept aside after grinding it. Crumble or grate the mawa. In a pan, cook the mawa over low heat until it’s melted and releases a nice aroma. Keep stirring to avoid sticking to the bottom. |
