Healthy Veg Dip   

Ingredients

For Boiling

Chickpea (छोले) – ¾ cup

Rajma (राजमा) – ¼ cup 

Water (पानी) – 2 cups 

Salt (नमक) – 2 tsp 

Baking Soda (मीठा सोडा) – ½ tsp 

Tomato, medium (टमाटर) – 2 nos

Onion, medium (प्याज़) – 1 no 

Green Chilli (हरि मिर्च) – 1 no 

Carrots, medium (गाजर) – 2 nos 

Cauliflower, small (फूल गोभी) – ½ no  

Green Chilli (हरि मिर्च) – 1 no 

Garlic Clove (लहसुन) – 1 no 

Pepper Powder (काली मिर्च पाउडर) – ½ tsp 

Roasted Cumin Powder (भुना जीरा पाउडर) – 2 tsp 

Salt (नमक) – to taste

Lemon, small (नींबू) – 1½ nos 

Olive Oil (ज़ैतून तेल) – ¼ cup 

Ice cubes (बर्फ) – 2-3 nos

Tahina (तिल का पेस्ट) – 1½ tbsp

 

For Tempering

Olive Oil (ज़ैतून तेल) – 2 tbsp

Cumin (जीरा) – ½ tsp 

Garlic, sliced (लहसुन) – 1 tbsp

Kashmiri Chilli Powder (कश्मीरी चिल्ली पाउडर) – 1 tsp 

Coriander, chopped (ताज़ा धनिया) – handful

For a healthy veg dip, in a cooker, we will add overnight-soaked chickpeas, rajma, water, salt, baking soda, tomatoes, green chillies, onion quarters, roughly cut carrots or any seasonal veggies, and cauliflower florets. Pressure cook until everything becomes mushy.

Let the mixture cool and blend it without adding the remaining water (you can use the highly nutritious water later for making soups or in a dough to make it more healthier).

In the same blender, add green chillies, a garlic clove, black pepper powder, roasted cumin powder, lemon juice, salt, olive oil, ice cubes, and tahini (optional). Blend until the mixture is smooth and homogeneous.

For the tadka, heat some oil in a pan. Add cumin and sliced garlic, and cook lightly. After turning off the flame, add Kashmiri chilli powder and pour the tadka directly over the dip. Garnish with freshly chopped coriander and enjoy this yummy dip with pita bread or use it as a sandwich spread!
