Mexican Paneer Burrito 

“Burro” is just a donkey and “burrito” is a small, or little, donkey in Spanish.

 

Ingredients

For Mexican Seasoning

Cumin (जीरा) – 1 tbsp 

Coriander seeds (धनिया बीज) – 2 tbsp

Cinnamon (दालचीनी) – a small piece 

Cloves (लौंग) – 5-6 nos

Oregano, dried (ऑरेगनो) – 1 tbsp 

Kashmiri chilli powder (कश्मीरी मिर्च पाउडर) – 1 tbsp

Salt (नमक) – 1 tsp 

Onion powder (प्याज़ पाउडर)- ½ tsp 

Garlic powder (लहसुन पाउडर) – ½ tsp 

 

For Paneer

Paneer (पनीर) – 200 gms 

Olive Oil (जैतून तेल) – ¼ cup  

Mexican seasoning (मेक्सिकन सीज़निंग) – 2 tbsp 

Garlic, chopped (लहसुन) – ½ tsp 

Lemon juice (नींबू रस) – 1 tbsp 

Salt (नमक) – to taste 

 

For Lemon Coriander Rice 

Butter (मक्खन) – 2½ tbsp

Onion, chopped (प्याज़) – ½ cup 

Rice (चावल) – 1 cup 

Salt (नमक) – to taste

Water (पानी) – 1½ cups

Coriander, chopped (ताज़ा धनिया) – ½ cup

Lemon juice (नींबू रस) – 3 tbsp

 

For Salsa (Pico De Gallo)

Tomato, diced (टमाटर) – 1 cup

Onion, chopped (प्याज़) – ½ cup 

Coriander, chopped (ताज़ा धनिया) – handful

Corn niblets, boiled (उबला मकई दाना) – ½ cup 

Green chilli, chopped (हरि मिर्च) – 2 nos

Salt (नमक) – to taste

Lemon juice (नींबू रस) – 4 tbsp

 

Burrito Sauce 

Garlic, chopped (लहसुन) – ½ tsp 

Water (पानी) – a dash 

Hung Curd (गाढ़ी दही) – 1 cup

Chilli Sauce (चिल्ली सॉस) – 2-3 tbsp

Salt (नमक) – to taste 

Lemon Juice (नींबू रस) – 1 tbsp

Mexican Seasoning (मेक्सिकन सीज़निंग) – 2 tsp 

 

Refried Beans 

Olive Oil (जैतून तेल) – 3 tbsp

Onion, sliced (प्याज़) – ½ cup 

Garlic, chopped (लहसुन) – 1 tsp 

Green chilli, chopped (हरि मिर्च) – 2 nos

Rajma, boiled (राजमा) – 1 cup 

Salt (नमक) – to taste

 

For Rolling

Flour Tortilla, large (तौरतिआ) – 4 nos

Avocado, medium (अवोकेडो) – 1 no

Iceberg lettuce, shredded (आइस बर्ग लेटस) – 2 cups  

Cheese, grated (चीज़) – 1 cup

For the Mexican spice blend, we will grind cumin, coriander seeds, cinnamon, cloves, and oregano. Next, mix in some powdered spices such as Kashmiri chili powder, salt, onion powder, and garlic powder.

Rub the paneer with oil, the spice blend, chopped garlic, and lemon juice. Let it marinate for 20 minutes. After this time, sear the paneer in a hot pan on both sides until golden.

For the lemon coriander rice, melt butter in a pressure cooker and sauté chopped onions until translucent. Then, add the rice, salt, and water. When the water level is equal to that of the rice, put the lid on, give it 2 whistles, turn off the flame, and let it sit in its steam for 10 minutes. Open the lid, scoop the rice into a large vessel, add chopped coriander, lemon juice, and mix gently.

For the salsa, combine diced tomatoes, onions, chopped coriander, boiled corn, chopped green chilies, salt, and lemon juice in a bowl and mix well.

To make the burrito sauce, add hung curd, garlic water, chili sauce, Mexican seasoning, salt, and lemon juice into a bowl, and whisk everything together.

For the refried beans, temper onions, garlic, and green chilies in a pan and cook for about a minute. Then, add boiled rajma along with some of its cooking water and salt, and cook until the water has completely reduced.

For assembling the burrito, take a tortilla and layer it with rice, refried beans, paneer, an avocado slice, salsa, burrito sauce, iceberg lettuce, and cheese. Fold the tortilla as shown in the video. Finally, toast it on both sides until it achieves a light brown color.
