Mexican Paneer Burrito
“Burro” is just a donkey and “burrito” is a small, or little, donkey in Spanish.
Ingredients
For Mexican Seasoning
Cumin (जीरा) – 1 tbsp
Coriander seeds (धनिया बीज) – 2 tbsp
Cinnamon (दालचीनी) – a small piece
Cloves (लौंग) – 5-6 nos
Oregano, dried (ऑरेगनो) – 1 tbsp
Kashmiri chilli powder (कश्मीरी मिर्च पाउडर) – 1 tbsp
Salt (नमक) – 1 tsp
Onion powder (प्याज़ पाउडर)- ½ tsp
Garlic powder (लहसुन पाउडर) – ½ tsp
For Paneer
Paneer (पनीर) – 200 gms
Olive Oil (जैतून तेल) – ¼ cup
Mexican seasoning (मेक्सिकन सीज़निंग) – 2 tbsp
Garlic, chopped (लहसुन) – ½ tsp
Lemon juice (नींबू रस) – 1 tbsp
Salt (नमक) – to taste
For Lemon Coriander Rice
Butter (मक्खन) – 2½ tbsp
Onion, chopped (प्याज़) – ½ cup
Rice (चावल) – 1 cup
Salt (नमक) – to taste
Water (पानी) – 1½ cups
Coriander, chopped (ताज़ा धनिया) – ½ cup
Lemon juice (नींबू रस) – 3 tbsp
For Salsa (Pico De Gallo)
Tomato, diced (टमाटर) – 1 cup
Onion, chopped (प्याज़) – ½ cup
Coriander, chopped (ताज़ा धनिया) – handful
Corn niblets, boiled (उबला मकई दाना) – ½ cup
Green chilli, chopped (हरि मिर्च) – 2 nos
Salt (नमक) – to taste
Lemon juice (नींबू रस) – 4 tbsp
Burrito Sauce
Garlic, chopped (लहसुन) – ½ tsp
Water (पानी) – a dash
Hung Curd (गाढ़ी दही) – 1 cup
Chilli Sauce (चिल्ली सॉस) – 2-3 tbsp
Salt (नमक) – to taste
Lemon Juice (नींबू रस) – 1 tbsp

Refried Beans
Olive Oil (जैतून तेल) – 3 tbsp
Onion, sliced (प्याज़) – ½ cup
Garlic, chopped (लहसुन) – 1 tsp
Green chilli, chopped (हरि मिर्च) – 2 nos
Rajma, boiled (राजमा) – 1 cup
Salt (नमक) – to taste
For Rolling
Flour Tortilla, large (तौरतिआ) – 4 nos
Avocado, medium (अवोकेडो) – 1 no
Iceberg lettuce, shredded (आइस बर्ग लेटस) – 2 cups
Cheese, grated (चीज़) – 1 cup

For the lemon coriander rice, melt butter in a pressure cooker and sauté chopped onions until translucent. Then, add the rice, salt, and water. When the water level is equal to that of the rice, put the lid on, give it 2 whistles, turn off the flame, and let it sit in its steam for 10 minutes. Open the lid, scoop the rice into a large vessel, add chopped coriander, lemon juice, and mix gently. |
