(Healthy Veg Soup)
Ingredients
For Blanching Tomato
Tomato, medium (टमाटर) – 6 nos
Olive oil (ओलिव आयल) – 4 tbsp
Bayleaf (तेज पत्ता) – 2 nos
Onion, diced (प्याज़) – 1 cup
Celery, Diced (सेलरी) – ⅓ cup
Carrots, diced (गाजर) – 1 cup
Garlic, chopped (लहसुन) – 1 tbsp
Thyme, fresh (थाईम)- 4-5 sprigs
Oregano, dried (ऑरेगनो) – 2 tsp
Tomato puree (टमाटर प्यूरी) – ¾ cup
Salt (नमक) – to taste
Potato, diced (आलू) – ½ cup
Beans, diced (बींस) – ½ cup
Green Zucchini, diced (ज़ुकिनी)- 1 cup
Pumpkin, diced (कद्दु) – 1 cup
Chilli flakes (कुट्टी मिर्च) – 2 tsp
Pepper powder (काली मिर्च पाउडर) – ½ tsp
Water (पानी) – 5 cups
Spinach leaves (पालक) – handful (or kale)
Basil leaves (तुलसी पत्ता) – few sprigs
Black eyed beans, boiled (लोभिया) – ¾ cup
Macaroni pasta (मैकरोनी पास्ता) – ½ cup
Green Peas, boiled (हरा मटर) – ½ cup
Parmesan cheese, grated (पारमेसन चीज) – for garnish
For Crusty Bread

Butter (मक्खन) – 3 tbsp
