For Batter
Boneless chicken breast or tenders – 4nos

Paprika
Marination 1
Flour (all purpose) – 1cup
Salt – to taste
Pepper – to taste
Chilli powder – a pinch
Marination 2
Eggs – 1 no
Salt – a large pinch
Flour (all purpose) – ⅓rd cup
Soda water (chilled) – 110ml
Marination 3
Flour (all purpose) – 1cup
Salt – to taste
White Pepper powder – generous pinch
Thyme powder – ½ tsp
Basil powder – 1/4tsp
Paprika powder – ½ tsp
Oregano dried – ¼ tsp
Ginger powder – ½ tsp
Nutmeg powder – ¼ tsp
Clove powder – ¼ tsp
Cinnamon powder – ¼ tsp
Garlic powder – ½ tsp
Mustard powder – ¼ tsp
Oil – for frying
Chilli mayo
Mayonnaise – 1 cup
Tabasco – 2tsp
Tomato ketchup – ¼ cup

Ginger chopped – 2tsp
Green chilli chopped – 1tsp
Onions chopped – 3tbsp
Capsicum – 3tbsp
Tomato chopped – 3tbsp
Turmeric – ½ tsp

Coriander powder – 2tsp
Salt – to taste
Leftover Fried Chicken – 1cup
Boiled Rice – 1 ½ cup
Coriander chopped – handful

Cut chicken breast into thick strips. Marinate with salt and pepper and keep aside. Prepare the 3 coatings/marinations separately by mixing them together in individual bowls. Marination 1 & 3 are dry coatings and marination 2 is wet coating. For marination 2 the consistency of the batter should be thick and pouring like a pancake batter. Made sure you add chilled soda to it. Add the soda just before adding the chicken to it. |

Dunk the chicken in marination 1 and coat it completely. Now dip it in second margination, do not wipe the excess marinade off the chicken and immediately dunk into 3rd margination. Make sure to tightly press the chicken when it is in third marination on to the chicken. Now deep fry the chicken in hot oil. Remove and serve hot. For the dip combine mayonnaise, tomato ketchup and chilli sauce. Serve with the chicken. |

Chicken Fried Rice Recipe Using Leftover Fried ChickenFor fried rice heat oil and saute ginger, green chilli, onions, peppers and tomatoes for 2-3mins. Add leftover diced chicken along with the spices and toss them for another 3mins. Add rice, coriander and mint and toss them together. Check & adjust seasoning and serve it hot. |
