Milk, full fat (दूध) – 1 lt reduce to 400 ml
Mango, medium (आम) – 1 no (250 gms pulp)
Sugar (चीनी) – ¼ cup / 4 tbsp
Custard Powder (कस्टर्ड पाउडर) – 1 tbsp (optional)
Yellow Food Colour (पीला रंग) – a drop (optional)

To prepare the 3-Ingredient Mango Malai Kulfi, begin by reducing 1 liter of full-fat milk to 400 ml. This reduction process typically takes about 30 minutes over low heat. Be sure to stir occasionally to prevent sticking and burning. Ensure the mango is pureed and lightly cooked in a separate pan before adding it to the milk mixture. This helps prevent crystallization in the kulfi. Add the cooked mango puree. Stir well and allow it to cook for an additional 5 minutes to infuse the mango flavor into the milk. |

Next, add 1/4 cup of sugar to the mixture, stirring until the sugar dissolves completely. Optionally, for added thickness and texture, incorporate 1 tablespoon of custard powder into the mixture. This also helps prevent crystallization in the kulfi. If desired, add a drop of yellow food coloring for a vibrant hue. However, this step is entirely optional. Pour the mango-milk mixture into kulfi molds or any freezer-safe container. Insert kulfi sticks or ice cream sticks into each mold and freeze them for at least 6 hours or overnight until the kulfi sets completely. |
