Aloo Bhindi Ki Sabji
Ingredients
Mustard Oil (सरसों तेल) – 5 tbsp
Dry Red Chilli (सुखी लाल मिर्च) – 2-3 nos
Heeng (हींग) – ½ tsp
Cumin (जीरा) – 1 tsp
Green Chilli, slit (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 2 tsp
Potato, medium (आलू) – 2 nos
Salt (नमक) – ½ tsp
Bhindi (भिंडी) – 500 gms
Salt (नमक) – to taste
Amchur (अमचूर) – 2 tsp
Turmeric (हल्दी) – ½ tsp
Chilli Powder (मिर्च पाउडर) – 1 tsp
Coriander Powder (धनिया पाउडर) – 2 tsp
Cumin Powder (जीरा पाउडर) – 1 tsp
Black Salt (काला नमक) – ½ tsp
Onion, medium (प्याज़) – 2 nos
Salt (नमक) – a pinch
Ghee (घी) – 2 tsp
Kasoori Methi Powder (कसूरी मेथी पाउडर) – a pinch
Coriander, chopped (ताज़ा धनिया) – handful

Wash the okra and pat it dry. Trim the ends and chop it into 1.5-inch pieces. Peel and dice the potatoes into small cubes. Heat a pan, pour mustard oil and heat the oil. Add dried red chillies, heeng,and jeera, let the jeera splatter. Now drop in green chillies and potatoes. Sprinkle some oil and cook the potato for 4 to 5 mins. |

Add the okra, lower the heat and sprinkle salt and amchoor. Toss it and cook it well for 1 minute and then let it cook for 5 to 7 minutes with a closed lid. Drop in haldi, chilli powder, coriander powder, cumin powder, and black salt then mix them all well. Add onions and sprinkle some salt. Mix well. Lower the heat and cook it till it’s done with the lid closed. Pour some ghee and sprinkle kasoori methi and chopped coriander powder. Mix it well and Aloo Bhindi is ready to be enjoyed with rotis or parathas. |
