Simple Aloo Jeera
Ingredients
Potato, large, boiled (आलू) – 4 nos
Desi Ghee (घी) – 2 tbsp
Dry red chilli (सूखी लाल मिर्च) – 1 no (optional)
Cumin (जीरा) – 1½ tsp
Ginger, chopped (अदरक) – 2 tsp
Green chilli, chopped (हरि मिर्च) – 2 nos
Turmeric (हल्दी) – ¾ tsp
Red chili powder (मिर्ची पाउडर) – 1 tsp
Salt (नमक) – to taste
Amchur powder (अमचूर) – 2 tsp
Coriander, chopped (ताज़ा धनिया) – handful
Heeng Jeera Aloo
Ingredients
Potato, large (आलू) – 4-5 nos
Mustard oil (सरसों तेल) – 4-5 tbsp
Heeng (हींग) – ½ tsp
Cumin (जीरा) – 1½ tsp
Onion, medium (प्याज़) – 3 nos
Salt (नमक) – to taste
Black salt (काला नमक) – ½ tsp
Turmeric (हल्दी) – ¾ tsp
Coriander powder (धनिया पाउडर) – 1½ tbsp
Chaat masala (चाट मसाला) – 1 tbsp
Chilli Flakes (कुट्टी मिर्च) – 2 tsp
Kasoori Methi Powder (कसूरी मेथी पाउडर) – 2 pinches
Coriander, chopped (ताज़ा धनिया) – handful
Masala Jeera Aloo

Ghee (घी) – 2½ tbsp
Cumin (जीरा) – 1½ tsp
Ginger, chopped (अदरक) – 2 tsp
Green chilli, chopped (हरि मिर्च) – 2 nos
Garlic, chopped (लहसुन) – 2 tsp
Onion, chopped (प्याज़) – 1 cup
Turmeric (हल्दी) – ¾ tsp
Red chilli powder (लाल मिर्च) – 1 tsp
Tomato, chopped (टमाटर) – 1 cup
Salt (नमक) – to taste
Baby potatoes, boiled (छर्रा आलू) – 40 nos
Salt (नमक) – to taste
Chaat masala (चाट मसाला) – 1 tbsp
Garam masala (गर्म मसाला) – ½ tsp
Water (पानी) – ½ cup
Kasoori methi (कसूरी मेथी) – a large pinch
Coriander, chopped (ताज़ा धनिया) – handful

For a simple Aloo Jeera, start by dicing boiled potatoes into medium-sized pieces. In a pan, heat some ghee and temper dried red chilies, cumin seeds, chopped ginger, and chopped green chilies. Lightly toss these ingredients until they are fragrant. Then, add the diced potatoes along with turmeric, red chilli powder, salt, and amchur powder. Toss everything together until the potatoes are evenly coated with the spices. Finally, garnish with chopped coriander. Your simple Aloo Jeera is ready! |

For Heeng Jeera Aloo, begin by cutting the potatoes into round slices. In a pan, heat some mustard oil, and add dried red chilies, asafoetida, cumin seeds, and salt. Toss these ingredients on high heat. When the potatoes are nearly cooked, add sliced onion rings, more salt, turmeric, coriander powder, chaat masala, chili flakes, kasuri methi, and freshly chopped coriander. |

For Masala Jeera Aloo, heat some ghee in a pan and add cumin seeds, chopped ginger, garlic, green chilies, and chopped onions. Add turmeric and red chilli powder, followed by chopped tomatoes. Cook for 3-4 minutes until the mixture becomes mushy. Next, add boiled baby potatoes to the same pan, along with salt, chaat masala, garam masala, and a bit of water. Once the water has fully evaporated, garnish with chopped coriander, and your Masala Jeera Aloo is ready! |
