Aloo Pyaz Paratha, Mix Veg Raita

Ingredients
For dough
Whole wheat flour (आटा) – 2 cups
Salt (नमक) – ½ tsp
Water (पानी) – as required
Oil (तेल) – a dash
For Filling
Boiled Potatoes, small (उबला आलू) – 4 nos
Onion, chopped (प्याज़) – ½ cup
Turmeric (हल्दी) – ½ tsp
Chilli powder (मिर्ची पाउडर) – 1 tsp
Coriander powder (धनिया पाउडर) – 1 tbsp
Cumin (जीरा) – 1 tsp
Kasoori methi (कसूरी मेथी) – a large pinch
Ginger, grated (कद्दूकस अदरक) – 2 tsp
Green chilli, chopped (हरि मिर्च) – 2 nos
Coriander, chopped (ताज़ा धनिया) – handful
Salt (नमक) – to taste
Chaat masala (चाट मसाला) – 1 tsp
Oil (तेल) – to fry
Whole wheat flour (सूखा आटा) – for rolling
Mix Veg Raita
Curd, thick (दही) – 2 cups
Cucumber, small (खीरा) – 1 no
Carrot grated, small (गाजर) – 1 no
Onion, chopped (प्याज़) – 2 tbsp
Tomato chopped, medium (टमाटर) – 1 no
Coriander, chopped (ताज़ा धनिया) – handful
Green chilli, chopped (हरि मिर्च) – 1 nos
Salt (नमक) – to taste
Black salt (काला नमक) – ½ tsp
Roasted cumin, crushed (भुना जीरा) – 1½ tsp
Oil (तेल) – 2 tbsp
Heeng (हींग) – ¾ tsp

To make the dough, combine whole wheat flour (atta), salt, and water to create a firm dough. Coat the dough with oil and let it rest for 10–15 minutes. |

Before you season the mixture, divide it into portions and roll out the parantha dough. Then, season your potato mixture with salt and chaat masala, mixing everything thoroughly. |

To prepare mixed veg raita, start by taking a bowl and adding thick curd. Then, incorporate grated cucumber, grated carrots, chopped onions, chopped tomatoes, chopped coriander leaves, and chopped green chilies. Season the mixture with salt, black salt, and crushed roasted cumin. For the tadka, heat a pan and temper some asafoetida. Once done, add this tadka to the curd mixture and mix well. Enjoy! |
