Ingredients
Oil (तेल) – 2 tbsp
Gram Flour (बेसन) – 2 tbsp
Butter (मक्खन) – 3 tbsp
Onion, chopped (प्याज़) – ½ cup
Green chilli, chopped (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 2 tsp
Turmeric (हल्दी) – ½ tsp
Chilli Powder (मिर्च पाउडर) – 1½ tsp
Coriander Powder (धनिया पाउडर) – 1 tbsp
Cumin Powder (जीरा पाउडर) – ½ tsp
Tomato, chopped (टमाटर) – ½ cup
Salt (नमक) – to taste
Water (पानी) – 1 cup
Paneer (पनीर) – 200 gms
Kasoori Methi Powder (कसूरी मेथी पाउडर) – a pinch
Garam Masala (गरम मसाला)- a pinch
Coriander, chopped (ताज़ा धनिया) – handful

For Amritsari Paneer Bhurji, heat a pan, drizzle some oil and drop in besan to the oil when it’s hot. Roast the besan till it’s light brown and keep it aside. In a hot pan, melt butter and add chopped onions, green chillies, and ginger. Saute until onions for a little while. Add turmeric, chilli powder, coriander powder, and cumin powder. Mix well and cook for a minute. Sprinkle some salt Add chopped tomatoes and cook for a while. Don’t overcook it. |

Add the roasted besan and stir it well. Pour the water and cook it till it’s like a semi-dry gravy. Add the grated paneer towards the end. Stir it well and cook the paneer for a while. Sprinkle some kasoori methi powder, garam masala and coriander chopped. Amritsari Paneer bhurji is ready to be enjoyed with bread. |
