Masala Bhurji Pav
Eggs (अंडे) – 4 no
Salt (नमक) – ½ tsp
Butter (मक्खन) – 2 tbsp
Onions, Chopped (प्याज) – ½ cup
Green Chilli, Chopped (हरी मिर्च) – 1 no
Ginger, Chopped (अदरक) – ½ tsp
Garlic, Chopped (लहसुन) – ½ tsp (optional)
Turmeric (हल्दी) – ½ tsp
Pav Bhaji Masala (पाव भाजी मसाला) – ½ tbsp
Tomato, Chopped (टमाटर) – ½ cup
Coriander, Chopped (धनिया) – 1 tbsp
For Masala Pav
Pav (पाव) – 6 pcs
Butter (मक्खन) – 2 tbsp
Pav Bhaji Masala (पाव भाजी मसाला) – a generous pinch
Coriander, Chopped (धनिया) – handful
For Cheese Bhurji Pav
Eggs (अंडे) – 4 pc
Salt (नमक) – ½ tsp
Butter (मक्खन) – 2 tbsp
Onions, Chopped (प्याज) – ½ cup
Green chilli, Chopped (हरी मिर्च) – 1no
Chicken Sausage, Medium (सॉसेज) – 4 no
Pepper Powder (काली मिर्च) – ½ tsp
Oregano (ओरिगैनो) – 1 tsp
Chilli flakes (चिली फ्लेक्स) – 1 tsp
Mozzarella Cheese, Grated (मौज़रेला) – ¼ cup
For Cheese Pav
Pav (पाव) – 6 pc
Butter (मक्खन) – 2 tbsp
Pepper (काली मिर्च) – a pinch
Oregano (ओरिगैनो) – 1 tsp
Chilli Flake (चिली फ्लेक्स) – 1 tsp
Mozzarella Cheese, Grated (मौज़रेला) – 3 to 4 tbsp
Coriander, Chopped (धनिया) – 1 tbsp

For Masala Bhurji PavIn an empty bowl, crack the eggs open and whisk them well to incorporate air in the egg, add seasoning and whisk well. This will help incorporate air and make the bhurji softer. In case you drop a piece of the egg shell into the bowl, you can easily remove it with the help of another egg shell to pick it up or use damp fingers/spoon. |

Gently melt the butter in a pan. Once the butter melts, add onions, along with some chopped green chillies. Add very little ginger and garlic. Give this mix a quick stir, while cooking the onions but now browning them. Add turmeric while the onions cook along with the special pav bhaji masala. Mix this well to cook for a bit and then add in the tomatoes. Cook this entirely on a medium flame so that the masalas don’t burn. Once the onions and tomatoes are soft but holding their shape, add the whisked eggs slowly into the pan and reduce the flame to a low flame. Stir the eggs continuously in the pan, and slowly the bhurji will come together. |

Once the egg bhurji is ready, turn the gas off and garnish with some chopped coriander. The masala bhurji is now ready to be plated. Slice to open the pav from the center and smear butter to the pav and. Cook them well for a crispy inside and keep rotating them for an even colour. Once the pav is ready, sprinkle some pav bhaji masala along with chopped coriander on the pav and toast over pan again. You can now serve these with the masala egg bhurji. |

For Cheese Bhurji PavCrack the eggs into a bowl and add salt to them. Slice the sausages and keep aside. Whisk these eggs well to incorporate air between them. Heat up a pan and melt the butter in the pan. Once the butter melts, add onions, along with some chopped green chillies. Give them a quick stir on a medium flame without browning them. Now add sausages to the pan for a meaty flavour to the bhurji. You can add bacon or ham too. Adding meat to the bhurji is completely optional. |

To add flavour, put black pepper, oregano, chilli flakes and a little bit of salt, just enough to season the onions. Decrease the flame and add the eggs to the pan. Stir the eggs continuously in the pan. Once the bhurji begins to come come together, add in the grated cheese. |

Mix this up and keep cooking over low flame till the egg is cooked. Once they come together, the cheese bhurji is ready to be plated. For the pav, slice open the pav and apply butter to the open end of the split pav and gently press them over a hot pan. Once the pav is toasted, sprinkle pepper, oregano, chilli flakes and some grated cheese on top. Garnish it with some fresh coriander or parsley and serve it hot with bhurji. |
