Directions
Bal Methai is the famous sweet of Almora, Uttarakhand. It is made of just 3 ingredients Khoya, Ghee & Sugar. Khoya is cooked till turns dark brown resembling chocolate (it is also called chocolate for the same reason in almora). It is sweet stick fudgy gooey piece of milk that is irresistable. In a kadai heat ghee and add khoya. Stir continuously and cook over medium hot flame till it turns evenly brown. This will take a long time (30mins approx) so be patient with it. |

In another pan and water and sugar and bring to a boil. once the sugar dissolves remove from heat. |

Once the khoya turns into a dark shade of brown. Now add 300gms of sugar and cook again. Remember to keep stirring it. Cook till the sugar dissolves. Now slowly add the thin sugar syrup. Mix it till all of the water mixes with khoya. Now cook it again for 5-8min. Take out a spoonful in a plate and spread it. If upon cooling the mixture leaves the plate then it is ready. |

Grease a metal tray and pour the browned khoya. Spread it and let it cool. Now using a knife cut into small pieces. Roll it in sugar balls and serve. |
