Directions
Caramelising Sugar can be quite a task. You either end up burning sugar or worse even getting sugar sticking to the spoon with uneven caramelised sugar.

In a non stick pan add sugar. Heat the pan gently. Do not use any laddle to stir. Instead swirl the pan till all of the sugar caramelises into a light amber colour. |

To get a more intense dark caramel colour cook a little more to a darker share and remove. |
