Cheese Upma Recipe, Tomato Relish

Ingredients

  • Butter – 2-3 tbsp
  • Kalonji – ¼ tsp
  • Garlic chopped – 1tsp
  • Onion chopped – 1-2 tbsp
  • Green chilli chopped – 1no
  • Suji – ¼ cup
  • Milk – 2 cups
  • Veggies chopped finely – ½ cup (use what ever you have. Eg carrots, Broccoli, beans, cauliflower, peas, cabbage etc.)
  • Peanuts (roasted) – handful (optioal)
  • Salt – to taste
  • Pepper – To Taste
  • Cheese Grated – ½ cup (can use cheese slices as well)
  • Spring onion chopped – 2 tbsp(optional)

Tomato Relish

  • Toamto chopped – 2 cups
  • Saunf – 1 tsp
  • Cumin – 1tsp
  • Salt – to taste
  • Black salt – to taste –
  • Sugar – 1-2tbsp
  • Vinegar – 2-3tbsp
  • Kashmiri chilli powder – ½ tsp
  • Onion chopped – 2tsp

For Upma heat a pan and add kalonji. Dry roast it for 2mins. Add butter garlic, onion and green chilli. Saute it in butter for a minute and then add the veggies. Cook the veggies for 3mins and then add the suji. Cook again for a minute and then add milk. Season with salt and add peanuts. Once it thicken but still pouring consistency remove from heat add cheese and spring onions. Toss and serve hot.

For the tomato relish mix all ingredients together in a pan. Cover an cook for 5 mins. Uncover and cook for a minute more, remove and serve warm or cold with the upma.
