Dal Palak Tadka
Ingredients
Tur dal (तूर दाल) – ½ cup
Masoor dal (मसूर दाल धुली) – ¼ cup
Moong dal (मूँग दाल धुली) – ¼ cup
Chana dal (चना दाल) – ¼ cup
Water (पानी) – 4 cups
Turmeric (हल्दी) – ½ tsp
Onion, small (प्याज़) – ½ no
Garlic cloves (लहसुन) – 5 nos
Green chilli (हरि मिर्च) – 1 no
Ginger, chopped (अदरक) – 1 tsp
For Tadka
Ghee (घी) – 2 tbsp
Dry Red Chilli (सूखी लाल मिर्च) – 2 nos
Heeng (हींग) – ½ tsp
Cumin (जीरा) – 1 tsp
Garlic, chopped (लहसुन) – 1 tbsp
Onion, large (प्याज़) – 1 no
Green Chilli, chopped (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 2 tsp
Turmeric (हल्दी) – ½ tsp
Chilli powder (जीरा) – 1 tsp
Sambar Masala (सांभर मसाला) – 1 tbsp
Tomato, large (टमाटर) – 2 nos
Salt (नमक) – to taste
Palak, large bunch (पालक) – 1 no
Lemon (नींबू) – 1 wedge
Ghee (घी) – 2 tsp
Coriander, chopped (ताज़ा धनिया) – handful
For Sambhar Masala
Chana Dal (चना दाल) – 2 tbsp/ 25 gms
Urad Dal (उड़द दाल) – 1 tbsp/ 15 gms
Coriander Seeds (धनिया बीज) – 2 tbsp/ 20 gms
Cumin (जीरा) – 1tbsp/ 12 gms
Black Pepper (काली मिर्च) – ½ tbsp/ 6 gms
Methi Seeds (मेथी दान) – 1 tsp/ 4 gms
Dry Red Chilli, medium sized (सूखी लाल मिर्च) – 10-12 nos/10 gms
Curry leaves, optional (करी पत्ता) – a sprig
Asafoetida (हींग) – ½ tsp

For Dal Palak, drain the soaked tur dal, masoor dal, moong dal, and chana dal. Rinse the lentils thoroughly under running water until the water runs clear. Transfer the dal to the pressure cooker and pour some water. Sprinkle some turmeric, then add roughly cut onion, garlic, green chilli and ginger. Cook till 3 whistles. |

For the tadka, in a hot pan, melt some ghee and add dried red chilli, heeng, cumin, and garlic. Roast them on low flame for a while then add onion and toss it. Add chopped green chillies and ginger. Cook till the onion gets light brown in colour. Sprinkle turmeric, red chilli powder, sambhar masala, tomato, and salt. Stir it well. Cook till the tomatoes are cooked. |

Clean the spinach, roughly cut it, drop it in the pan and cook it lightly with the tadka. Transfer the tadka to the dal in the pressure cooker. Cook it for 5 minutes. Towards the end, squeeze a lemon into the dal palak. It will help the starch to break. Drop in some ghee and chopped coriander leaves. Dal Palak Tadka is ready to served hot. Enjoy with some rice, roti, or parathas. |
