For the Potato FriesPeel the potatoes. Cut them lengthwise into quarter of an inch slices. Then place the slices flat on the chopping board and cut them again lengthwise at quarter of an inch into the finger size fries. Soak the fries in water for 2-3 hours in a refrigerator. This will release any excess starch from the potato, making them crispy later. |

Remove the fries from water and put onto a kitchen towel and pat them dry completely. Boil 3lts water and add 1tbsp salt. Add the fries in boiling water and cook till they are about 80% cooked. At this stage you can fry them in hot oil till they turn golden brown in colour and serve them tossed in salt of the spice mix. |

The other way is to cool them completely after boiling. Put them in a plastic bag and deep freeze them for a day. At any time you need to eat fries simply add the frozen fries without thawing straight from the freezer to hot oil. Cook till they are golden brown. |
