Fried Rice – Italian, South Indian, Singaporean
Italian Fried Rice
Ingredients
Olive Oil (ज़ैतून तेल)- 3 tbsp
Garlic, chopped (लहसुन) – 1 tbsp
Chilli flakes (कुट्टी मिर्च) – 1 tsp
Onion, diced (प्याज़) – ½ cup
Basil leaves (तुलसी पत्ता) – 2 sprigs
Oregano, dried (ऑरेगैनो) – 1 tsp
Tomato, chopped (टमाटर) – ½ cup
Green Olives (हरा ज़ैतून) – handful
Black Olives (काला ज़ैतून) – handful
Salt (नमक) – to taste
Boiled Rice (उबला चावल) – 2 cups
Water (पानी) – a dash
Parmesan cheese, grated (चीज़) – ½ cup
South Indian Fried Rice
INGREDIENTS
Oil (तेल) – 3 tbsp
Asafoetida (हींग) – ½ tsp
Mustard seeds (सरसों दाना) – 1 tsp
Dry Red chilli (सूखी लाल मिर्च) – 3 nos
Chana dal (चना दाल) – 1 tsp
Urad dal (उड़द दाल) – 1 tsp
Curry leaves (कड़ी पत्ता) – handful
Raw mango, chopped (कचा आम) – ½ cup
Salt (नमक) – to taste
Boiled Rice (उबला चावल) – 2 cups
Coriander chopped (ताज़ा धनिया) – handful
Green chilli, slit (हरि मिर्च) – 1 nos
Roasted Peanuts (भुनी मूँगफली) – ¼ cup
Water (पानी) – a dash
Coriander chopped (ताज़ा धनिया) – handful
Singapore Fried Rice
Ingredients
Oil (तेल) – 2 tbsp
Ginger, chopped (अदरक) – 2 tsp
Garlic, chopped, (लहसुन) – 1 tbsp
Onion, diced (प्याज़) – ½ cup
Broccoli, small florets, (ब्रोकली) – ⅓ cup
Carrot, diced (गाजर) – ⅓ cup
Cabbage, chopped (पत्ता गोभी) – ⅓ cup
Salt to taste (नमक) – to taste
Madras curry powder (मद्रास करी पाउडर) – 1½ tbsp
Boiled Rice (उबला चावल) – 2 cups
Soya sauce light (लाइट सोया सॉस) – 1 tbsp
Vinegar (सिरका) – 2 tsp
Spring onion, chopped (हरा प्याज) – handful
Sugar, (चीनी) – a pinch
Water (पानी) – a dash

Pepper powder (काली मिर्च) – a pinch

Italian Fried RiceFor Italian-style fried rice, add some olive oil, garlic, chilli flakes, and roughly chopped onion in a hot pan. Toss them for a minute on high heat. Now add basil leaves and oregano. Add tomatoes and toss for a while, then add olives and salt to taste. Give a gentle toss, then add rice. Mix gently and carefully. Just lift the rice with a spatula and drop it, keep doing this and it’ll be mixed evenly, or just toss it. Add a dash of water and cook for 2 to 3 minutes. Last but not least; add lots of parmesan cheese, gently mix it and serve it! |

South Indian Fried RiceFor South Indian style fried rice, add oil in a hot pan, then add heeng and mustard seeds. Just after the mustard pops up, add dried red chillies, chana dal, urad dal and curry leaves. Now let’s add raw mango. Toss it, then add salt to taste, rice and chopped coriander leaves. Give it a toss and mix everything evenly. Now add green chilli, roasted peanuts and a dash of water. Cook for 2 to 3 minutes. Top it with some coriander leaves and serve hot! |

Singapore Fried RiceFor Singapore style fried rice, add oil to a hot pan, add ginger, and garlic then cook lightly. Add diced onions, broccoli, carrot, cabbage, salt to taste and madras curry powder, then give it a toss. Mix them all well. Now add rice, soya sauce, vinegar, spring onions and sugar. Mix it very well, using the lift-and-drop method. Add a dash of water, then cook for 2 to 3 minutes. Top it with chopped spring onions and pepper powder. Enjoy! |
