Gur Makhana

Ingredients

Ghee (घी) – 1 tbsp 

Makhana (मखाना) – 4 cups (100g)

Ghee (घी) – 1 tbsp

Gur (गुड) – ½ cup (125g)

Baking soda (बेकिंग सोडा) – ½ tsp

Sesame (तिल) – ¼ cup (35g)

Saunf (सौंफ) – 2 tsp

Salt (नमक) – a pinch

Black pepper (काली मिर्च) – ½ tsp

Ginger powder (सौंठ) – 1 tsp

Black salt (काला नमक) – 2 pinch

 

Cheese Makhana

Ingredients

Ghee (घी) – 1½  tbsp

Makhana (मखाना) – 4 cups (100g)

 

For Cheese Seasoning

Cheese, grated (चीज़) – 110 grams/ 1 cup

Turmeric (हल्दी) – ¼ tsp

Black salt (काला नमक) – ¼ tsp 

Chilli powder (मिर्च पाउडर) – ½ tsp

Chaat masala (चाट मसाला) – ¼ tsp

Black Pepper powder (काली मिर्च पाउडर) – ¼ tsp

Salt (नमक) – ¼ tsp

Garlic powder (लहसुन पाउडर) – ¼ tsp

For Gur Makhana

In a kadhai, add some ghee, then add the makhana and roast them on medium flame. After that, remove them to a plate. Now, add some ghee and Jaggery to the kadhai and caramalise it. You can check whether it is caramalised by dropping a drop of molten jaggery into water, if it gets hard that means it is done. Add some baking soda and mix it well.

Now add the roasted makhana, sesame seeds, black pepper, ginger powder, black salt, saunf and a pinch of salt into it, and mix them all well.
Convert it into a flat tray and let it cool down.
When it cools down, separate the makhanas that are stuck together, with your hands.
Serve it and enjoy a healthy and tasty snack!

For Cheese Makhana

In a kadhai, add some ghee, then add the makhana and roast them on medium flame. After that, remove them to a plate.

For the seasoning, grate the cheese and spread it on a plate. Then let it dry up for 2 days.
We grated 100 grams of cheese, which dried up into 60 grams. Now, in a mixer grinder jar, add dried cheese, turmeric, black salt, red chilli powder, chaat masala, black pepper, garlic powder and salt, then grind it well.
Now, we just have to mix the seasoning well with the roasted makhana.
A tasty, crunchy and healthy snack is ready! Enjoy.
