Directions
Cabbage, (पत्ता गोभी), Shredded – 6 cups/600 gms
Apple (सेब), sliced – 1 pc
Salt (नमक) – 1 tsp
Vinegar/lemon juice (सिरका/नींबू का रस) – ¼ cup
Pepper powder (काली मिर्च पाउडर) – a pinch
Dressing
Oil (तेल) – 3 tbsp
Mustard Seeds (सरसों के बीज) – 1 tbsp
Dry Red Chilli (सुखी लाल मिर्च) – 4 pc
Urad Dal (उड़द दाल) – 1 tbsp
Chana Dal (चना दाल) – 1 tbsp
Ginger (अदरक), chopped – 2 tsp
Green Chilli (हरी मिर्च), slit – 2 pcs
Curry Leaves (करी पत्ता) – a handful
Yoghurt (दही), hung – ½ cup a little less than that
Coriander (धनिया), chopped – 2 tsp

Take a cabbage and split it in half, take a split half and at the centre of the bottom, on the inside cut an inverted v to remove the stock or the hard part of the cabbage. Now take the cabbage and press it down with your hands to flatten it out, once this is done chop the cabbage from one end to the other into long strands. Now add sliced apples to the cabbage. |

To this add lemon juice and salt, this will help the cabbage to release all its water and further this will help the dressing to stick to the cabbage. After giving it a rest for 10 to 15 minutes, squeeze out the water from the cabbage with light hands, don’t press it too hard. Once this is done, add the hung curd to the cabbage. |

Heat up a small tadka pan, drizzle some oil in it and heat it well. To the hot oil add mustard seeds, along with dried red chillies. Now add chana dal and urad dal for a good crunch in the salad. Put chopped ginger, slit green chillies and some curry leaves and toss them in the pan. Once the dal is lightly roasted, your tadka will be ready. Turn the gas off and pour the tadka over the salad, add some freshly chopped coriander and mix the salad. Once mixed well, the salad will be ready to be plated. |
