Cucumber salad
Ingredients
Cucumber (खीरा) – 3nos
Jaggery/Sugar (गुड़/चीनी) – 3 tbsp
Salt (नमक) – To Taste
Lemon Juice (नींबू का रस) – 5 tbsp
Ginger (अदरक) – a small piece/ ½ inch
Light Soya Sauce (सोया सॉस) – 3 tbsp
Sesame Oil (तिल का तेल) – 1 tbsp
Toasted Sesame (भुने तिल) – 1 tbsp
Red Capsicum (लाल शिमला मिर्च), Chopped – 2 tbsp

For the dressing, put some jaggery in the bowl, you can also add honey if jaggery is not available. Add just a little bit of salt along with some lemon juice. Grate ginger into this and add some light soya sauce. Now add some sesame oil to this mixture, you can use olive oil or also avoid using oil for a healthier alternative. Add some toasted sesame seeds to the bowl (lightly dry roast the sesame seeds on a pan). Mix this well till the jaggery completely dissolves. Taste the dressing before using it, it should be salty, sweet and spicy. Keep the dressing aside |

Add chopped red bell peppers, you can use fresh red chillies as well. Pour the dressing into the bowl with cucumbers and mix well, give it a rest for 15 minutes in the fridge for the cucumber to soak up all the flavours. The salad is now ready to be plated. |
