Jamun Kulfi

Ingredients 

Milk, full fat (दूध फुल क्रीम) – 1 lt 

Sugar (चीनी) – 5 tbsp

Corn Starch (कॉर्न स्टार्च) – 1 tbsp

Water (पानी) – a dash 

Jamun (जामुन) – 250 gms/40 nos

For jamun kulfi, reduce milk by half. Make a slurry of cornstarch (optional) and add it to the reduced milk along with sugar. Cook for a minute until everything is combined. Separate the jamun flesh from the seeds and blend it into a smooth paste.

Transfer the paste to the cooled reduced milk. (If the milk is not cooled properly, the jamun will lose its color. Pour the mixture into kulfi molds and freeze. Your jamun kulfi is ready to enjoy!
