Korean Fried Potato
Ingredients
For Boiling
Potatoes, large (आलू) – 5 nos
Salt (नमक) – 2 tbsp
Water (पानी) – 2 lts
For Coating
Garlic, chopped (लहसुन) – 1 tbsp
Water (पानी) – ¼ cup
Pepper powder (काली मिर्च पाउडर) – 1 tsp
Salt – to taste
Ginger, grated (अदरक) – 2 tsp
Corn Starch (कॉर्नस्टार्च) – 4- 5 tbsp
All Purpose Flour (मैदा) – 2 tbsp
Oil (तेल) – for deep frying
Gochujang
For Gochujang Paste
Water (पानी) – 2½ cup
Garlic, grated (लहसुन) – 6 nos
Vinegar (सिरका) – 2 tbsp
Sugar (चीनी) – 2 tbsp
Salt (नमक) – to taste
Water (पानी) – ¼ cup
Rice flour (चावल का आटा) – 3 tbsp
Kashmiri chilli powder (कश्मीरी चिल्ली पाउडर) – ½ cup
For Stir Frying
Oil (तेल) – 2 tbsp
Ginger, chopped (अदरक) – 2 tsp
Garlic, chopped (लहसुन) – 2 tsp
Tomato ketchup (टमाटर केचप) – ½ cup
Gochujang/Chilli Paste (चिल्ली पेस्ट) – 3 tbsp
Vinegar (सिरका) – 1 tsp
Light Soya sauce (लाइट सोया सॉस) – 1 tbsp
Honey (शहद) – 1 tsp
Salt (नमक) – to taste
Spring onions, chopped (हरा प्याज़) – handful
Sesame seeds (तिल) – 1 tbsp

Wash and Cut them into bite-sized wedges. Boil water and sprinkle salt in it. Put the potatoes in the boiling water to blanch it. Once blanched take them out from water and place them on a plate or flat bowl to cool them down. Sprinkle some pepper powder, salt, strain the garlic water and drizzle it, add ginger, cornstarch and maida. Mix them all well and make sure the potatoes are evenly coated. |

For sauce, in a hot pan, drizzle some oil, ginger, garlic, tomato ketchup, gochujang, vinegar, light soy sauce, honey, salt, chopped spring onions and sesame seeds. Mix them well. Now add the fried potatoes and toss. Sprinkle some chopped spring onions and serve hot! |
