Steps

1
Done

To prepare lauki vadi, start by peeling the lauki and cutting it into large chunks. Then, grate it using the larger side of the box grater. After grating, add salt, hing, kuta jeera, kuta dhaniya, chopped ginger, turmeric powder, chopped green chillies, chilli powder, garam masala, roasted sesame, chopped coriander, kasoori methi, lemon juice, rice flour, and besan.

2
Done

Mix everything together with your hands for 2-3 minutes. This will allow the water from lauki to come out. Once it is ready the mixture will resemble a thick pouring paste. I am using a square mold 7inchesx7inches and of 2inches height to steam this vadi. Lightly gease the mold with oil and pour the mixture in it. Spread it evenly and then place it in a steamer for 18-20 minutes.

Done

Once done the mixture should firm up. Carefully remove the mold from teh steamer and then run a knife along the sides to loosen it. Then upturn the mold on to a chopping board to remold it. Cut into equal size squares once it is still warm.
Heat a pan and pour some oil. Gently fry the lauki vadi on medium heat till crisp on all sides. You can also deep fry them. Once fried sprinkle chaat masala on top generously and serve it with fried green chillies.
