Lauki Ki Vadi
Ingredients
For Badi
Bottle gourd, grated (लौकी) – 3 cups
Salt (नमक) – to taste
Asafoetida (हींग) – ½ tsp
Cumin, pounded (जीरा) – 2 tsp
Coriander seeds, pounded (कुट्टा धनिया) – 2 tbsp
Ginger, chopped (अदरक) – 1 tbsp
Green chilli, chopped (हरि मिर्च) – 1-2 nos
Turmeric (हल्दी) – ½ tsp
Chilli powder (लाल मिर्च पाउडर) – 1½ tsp
Garam masala (गरम मसाला) – ½ tsp
Sesame, roasted (भुना तिल) – 3 tbsp (optional)
Coriander, chopped (ताज़ा धनिया) – ½ cup
Kasoori methi leaves (कसूरी मेथी) – 1 tbsp
Lemon, medium (नींबू) – 1 no
Rice flour (चावल का आटा) – ¼ cup
Gram Flour (बेसन) – 1 cup
Water (पानी) – 1-2 tbsp (if required)
Oil (तेल) – for basting
Oil (तेल) – for frying
Fried green chillies (तली हरि मिर्च) – handful
Chaat masala (चाट मसाला) – to taste
Note the square mold used is 7”x7”x2” (inches)

To prepare lauki vadi, start by peeling the lauki and cutting it into large chunks. Then, grate it using the larger side of the box grater. After grating, add salt, hing, kuta jeera, kuta dhaniya, chopped ginger, turmeric powder, chopped green chillies, chilli powder, garam masala, roasted sesame, chopped coriander, kasoori methi, lemon juice, rice flour, and besan. |

Mix everything together with your hands for 2-3 minutes. This will allow the water from lauki to come out. Once it is ready the mixture will resemble a thick pouring paste. I am using a square mold 7inchesx7inches and of 2inches height to steam this vadi. Lightly gease the mold with oil and pour the mixture in it. Spread it evenly and then place it in a steamer for 18-20 minutes. |

Once done the mixture should firm up. Carefully remove the mold from teh steamer and then run a knife along the sides to loosen it. Then upturn the mold on to a chopping board to remold it. Cut into equal size squares once it is still warm. |
