Onion Whole (साबुत प्याज) – 6 nos
Mustard oil (सरसों का तेल) – 3 tbsp
Garlic (लहसुन), chopped – ½ tsp
Black salt (काला नमक) – 1 tbsp
Salt (नमक) – to taste
Red chilli powder (लाल मिर्च पाउडर) – 1 tbsp
Chaat masala (चाट मसाला) – ¾ tbsp
Lemon juice (नींबू का रस) – 3 tbsp
Spring onions (हरा प्याज) chopped – handful

Take an onion and slice it half from the centre, without peeling it. Heat up a flat pan and put the onions with the sliced part on the pan and press it down well. The peel of the onion helps it to hold it together while grilling. Grill it till there are grill marks on the bottom, now flip it over and cook the other side. Once the grilling is done, take the onions out in a bowl. Now cover this bowl with a plate for about 5 to 10 mins for the onions to get soft. Till it rests, you can make the dressing. |

For the dressing, put mustard oil in an empty bowl and add some chopped garlic. Now add salt to the dressing along with black salt, kashmiri chilli powder, chaat masala and lemon juice. Whisk the dressing well. |

Take the onions out of the bowl on a chopping board, remove the root and the top end along with the outer or topmost skin of the onion. Now you can easily separate each layer of the onions easily. |
