- Tarbooz diced – 1/2 cup
- Kharbooza green diced – 1/2 cup
- Mint leaves – 1 cup
- Ginger chopped – 1 tbl spn
- Salt – 1 gm
- Lemon juice – 2 tbl spn
- Sarda diced – 1/2 cup
- Kharbooza Orange Diced – 1/2 cup
- Honey – 1 tbl spn
- oil – 3 tbl spn
- Black pepper powder – 2 gms
- Pine nuts – 3 tbl spn

Toss together all the melons and place in a bowl. |

Separately mix together mint leaves, ginger, honey, salt, pepper, lemon juice and half of the pine nuts in a blender and puree them. Add little by little oil to ease the grinding. |

Remove and drizzle this pesto on to the melons. Toast the remaining pine nuts and sprinkle on the top. Serve cold. |
