Ingredients
- Maida – 500gm
- Salt – ½ tsp
- Coriander seeds (pounded) – 2tbsp
- Ajwain – 1tsp
- Baking powder – ¼ tsp
- Baking soda – ¼ tsp
- Kasoori methi – 3tbsp
- Ghee – 150gms
- Water – as required
- Oil – for frying

Mix together flour, salt, coriander seeds, ajwain, baking powder, baking soda, methi and ghee. Rub them together to crumble it. With some water knead into a soft dough. |

Give rest for 10 mins and then cut them into small dough balls. Roll them up between your palm and then lightly flatten them. |

Heat oil in a deep vessel to medium hot and slide the mathi into the oil. Cook till they float on top and then increase heat and cook till they brown. |

Remove & cool completely before serving or storing. |
