For Fried Rice
Oil – 2 tbsp
Garlic, chopped – 2 tbsp
Onion chopped – ⅓ cup
Carrots chopped – ¼ cup
Corn niblets, boiled – ¼ cup
Rajma, boiled – ¼ cup
Capsicum, chopped – ¼ cup
Oregano, dried – 1 tsp
Coriander powder – ½ tsp
Cumin powder – ½ tsp
Kashmiri chilli powder – 1 tbsp
Tomato puree, fresh – ½ cup
Salt – to taste
Boiled rice – 3cups
Tomato, chopped – ¼ cup

Jalapenos – chopped – 1 tbsp

For Mexican Tomato Salsa

Green chilli, chopped – 1 tsp
Tomato puree, chunky – ¾ cup
Salt – ½ tsp
Coriander chopped – handful
Tomato ketchup – 3-4 tbsp
Lemon juice – 2 tbsp

How to Make any Kadai Non StickIf you are using any non-stick utensil to toss rice then chances are that it will stick to the vessel. So to make it non-stick, simply heat the kadai or any vessel that you are using to very high heat. Add 2-3tbsp of oil and let it smoke. Turn around the vessel to make sure that oil is coated on all sides. Turn off the heat and using a clean cloth rub that oil on the inside of the vessel. That is it the vessel is non-stick for one time cooking. |

For Mexican Fried RiceHeat a kadai and add oil and once the oil is hot add garlic and onions and give a quick stir. Add in carrots, boiled corn, boiled rajma (kidney beans), capsicum and stir them around for 30 secs. |
