Ingredients

For Rubbing

Gram flour (बेसन) – 3 cups

Ghee (घी) – 2 tbsp

Milk (दूध) – 2 tbsp

For Cooking

Ghee (घी) – ¾ cup

Milk (दूध) – ⅓ cup

For Syrup

Sugar (चीनी) – 1 cup

Water (पानी) – ½ cup

Saffron (केसर) – a pinch (optional)

Cardamom powder (इलाइची पाउडर) – 1 tsp

For Garnish

Pista, chopped (पिस्ता) – handful

Almonds, chopped (बादाम) – handful

Steps

1
Done

To make Mohan Thal, start by mixing ghee and milk into the besan until it is evenly combined. Sift this mixture to eliminate any grainy or lumpy bits.

2
Done

In a deep pan, heat some desi ghee, then add the besan mixture and cook it until the besan begins to release ghee on top and becomes liquid. Once this happens, turn off the heat and slowly add in the milk while stirring continuously to prevent it from sticking or burning. If the milk is not fully incorporated and the mixture isn't firm, turn the heat back on at low flame and continue cooking until it reaches a firm consistency.

3
Done

Next, in another pan, combine sugar, water, and saffron, cooking the syrup until it thickly coats the back of a spoon and forms a soft thread. Once done, add cardamom powder and the sugar syrup to the besan mixture, cooking until everything comes together and reaches a soft dough stage.

4
Done

Immediately transfer the mixture to a tray and allow it to set at room temperature. Your delicious and festive Mohan Thal is now ready!
