2cups Moong dal (sabut)

3tbsp Oil/Ghee

Wash the dal in water twice and soak in clean water for at least an hour, best would be overnight. Post that scrub the dal in between your hands for 3mins. Discard this water and wash the dal again with fresh water. Keep the dal soaked in water and keep it aside. |

Heat a pan and drizzle 3tbsp of ghee. Once the ghee is hot add sliced onions and cook them on medium heat till they start to brown. Lower the heat and let them brown evenly. Remove the fried onions along with its oil to a plate and keep it aside. |

Place the dal along with 6 cups of water and bring to a boil. Add the fried onions, turmeric, green chillies, ginger, salt and butter. Boil the dal covered till dal becomes tender. Add dry red chillies to hot ghee and once they start changing colour add cloves. Stir till they pop and then immediately add the tempering to the boiling dal. Stir the dal and cook for another 5min. Check for salt and adjust and squeeze a lemon wedge. Serve it hot with roti or rice. |
