Patta Gobhi Ki Sabji
Ingredients
Cabbage, large (पत्ता गोभी) – 2 nos
Salt (नमक) – 1 tsp
Turmeric (हल्दी) – ½ tsp
Mustard Oil (सरसों तेल) – 5 tbsp
Onion, large (प्याज़) – 1 no
Heeng (हींग) – ½ tsp
Dry Red Chilli (सूखी लाल मिर्च) – 2 nos
Mustard Seeds (सरसों बीज) – 1 tsp
Cumin (जीरा) – 1 tsp
Green Chilli, slit (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 2 tsp
Potato, medium (आलू) – 2 nos
Salt (नमक) – to taste
Tomato, medium (टमाटर) – 2 nos
Green Peas (हरा मटर) – ¾ cup
Salt (नमक) – to taste
Black Salt (काला नमक) – ½ tsp
Chilli Powder (लाल मिर्च पाउडर) – 2 tsp
Turmeric (हल्दी) – ½ tsp
Coriander Powder (धनिया पाउडर) – 1 tbsp
Chaat Masala (चाट मसाला) – 2-3 tsp
Coriander, chopped (ताज़ा धनिया) – handful

Shred the cabbage finely. In a large mixing bowl, add water, shredded cabbage, 1 tsp salt, and ½ tsp turmeric. Mix well and set aside for 15-20 minutes. Heat 5 tbsp of mustard oil in a pan. Once the oil is hot, add ½ tsp heeng, dry red chilli, mustard seeds, and cumin. Allow them to splutter. Add sliced onions, green chillies, and chopped ginger. Sauté until the onions turn golden brown. |

Add diced potatoes, sprinkle salt, and cook until the potatoes are partially cooked. Add diced tomatoes and green peas. Mix well and cook until the tomatoes are soft. Meanwhile, squeeze out excess water from the marinated cabbage and add it to the pan. Mix well. Season with salt, black salt, chilli powder, turmeric, coriander powder, and chaat masala. Mix thoroughly. Toss and mix it up. |
