Soupy Veg Noodles
Ingredients
For soup
Butter (मक्खन) – 2 tbsp
Garlic, chopped (लहसुन) – 2 tsp
Ginger, chopped (अदरक) – 2 tsp
Green Chilli, chopped (हरि मिर्च) – 1 no
Turmeric (हल्दी) – ½ tsp
Tastemaker (टेस्ट मेकर) – 2 pkt
Chilli Sauce (चिल्ली सॉस) – 1 tbsp
Mushrooms (मशरुम) – 5-6 nos
Broccoli, tiny florets (ब्रोकली) – handful
Carrot, chopped (गाजर) – ⅓ cup
Water (पानी) – 2 cups
Instant Noodles, crushed (इंस्टेटन नूडल्स) – ¼ pkt
Spring Onions, chopped (हरा प्याज़) – handful
Soya Sauce, light (सोया सॉस) – 2 tbsp
Instant Noodles (इंस्टेटन नूडल्स) – 1¾ pkt

Wash the veggies and cut the mushrooms into 2. Start by melting butter in a pan and sauté chopped garlic, ginger and green chilli. Add turmeric, tastemaker, chilli sauce and give it a quick stir and then add in the mushrooms, broccoli and chopped carrots. Cook them for 3-4 mins and then pour in 2 cups of water or stock. |

Take about 1/4 cup of the crushed instant noodles which are usually sitting in the bottom of pack and grind them to a fine powder. Once the soup comes to a boil and add powdered instant noodles. This will add taste and also thicken the soup. Add a dash of light soya sauce and cook till veggies are tender. Check and adjust the seasoning. |
