Subz Diwani Handi
सब्ज़ दीवानी हांडी
Ingredients
For Frying
Oil (तेल) – ¾ cup
Onion, sliced (प्याज़) – 1½ cups
Almonds (बादाम) – ⅓ cup
Curd (दही) – ¾ cup
For Curry
Oil (तेल) – 4 tbsp
Bay Leaf (तेज पत्ता) – 1 no
Caraway (शाही जीरा) – 2 tsp
Peppercorn (काली मिर्च) – 1½ tbsp
Cloves (लौंग) – 4-5 nos
Cardamom (ईलाइची) – 4-5 nos
Ginger garlic paste (अदरक लहसुन पेस्ट) – 1½ tbsp
Water (पानी) – a dash
Turmeric (हल्दी) – ¾ tsp
Kashmiri Chilli powder (कश्मीरी मिर्च पाउडर) – 2 tsp
Coriander powder (धनिया पाउडर) – 1½ tbsp
Cumin powder (जीरा पाउडर) – 1½ tsp
Salt (नमक) – to taste
Water (पानी) – a dash
For Veggies
Oil (तेल) – 2 tbsp
Butter (मखन) – 2 tbsp
Ginger, chopped (अदरक) – 2 tsp
Green chilli slit (हरि मिर्च) – 2 nos
Potato, diced (आलू) – ½ cup
Cauliflower florets (गोभी) – 1 cup
Carrot, sliced (गाजर) – ½ cup
Beans, 1” pieces (बीन्स) – ½ cup
Mushrooms, halved (मशरुम) – 5-6 nos
Broccoli, florets (ब्रोकोली) – ½ cup
Kasoori methi whole (कसूरी मेथी) – 1 tbsp
Corn niblets (मक्की दाना) – ⅓ cup
Green peas (हरा मटर) – ⅓ cup
Salt (नमक) – to taste
Water (पानी) – a dash
Paneer cubes (पनीर) – 6 nos
Spinach leaves, chopped (पालक) – 1 cup
Capsicum, diced (शिमला मिर्च) – ½ cup
Tomato chunks (टमाटर) – 4-5 nos

For Subz diwani handi, in a hot kadhai, add oil, then fry the onions till golden brown and strain the oil out of the onions. Strain it as much as possible then spread out the onions on a plate. |

Now in the kadhai, add the strained oil, then bay leaf, shahi jeera, peppercorn, cloves, cardamom, ginger garlic paste, turmeric powder, kashmiri chilli powder, coriander powder, cumin powder and a little salt. Stir it well and then add a dash of water so that the masalas won’t get burnt. Cook it well. |

We have to cook the vegetables, for that, in a pan, add oil and butter, then add chopped ginger, green chillies, then add potatoes and cook them for 3 to 4 minutes. Now add cauliflower, carrots and beans. Toss it a little and add some salt. Add mushroom, broccoli, kasoori methi, corn, peas and a dash of water. Cover it with a lid and cook for 10 minutes until it gets 70-80% done. Sabz Diwani handi is ready to be served and enjoyed with rotis, paranthas, pulao aur anything you would love to have it with! |
