Suji Ka Sandwich | Suji Aloo Ka Nashta

Ingredients
For Batter
Semolina (सूजी) – 1 cup
Curd (दही) – ½ cup
Salt (नमक) – ¾ tsp approx
Water (पानी) – 1 cup
Oil (तेल) – 2 tbsp
Asafoetida (हींग) – ½ tsp
Mustard seeds (सरसों दाना) – 1 tsp
Ginger, chopped (अदरक) – 2 tsp
Curry leaves (कड़ी पत्ता) – a sprig
Coriander, chopped (ताज़ा धनिया) – handful
Baking soda (मीठा सोडा) – ½ tsp
Oil (तेल) – for cooking
For Stuffing
Oil (तेल) – 3 tbsp
Dry red chilli (सूखी लाल मिर्च) – 2 nos
Mustard seeds (सरसों दाना) – 1 tsp
Urad dal (उड़द dal) – 1 tsp
Chana dal (चना दाल) – 2 tsp
Cumin (जीरा) – 1 tsp
Green Chilli, chopped (हरि मिर्च) – 2 nos
Ginger, chopped (अदरक) – 1 tsp
Curry leaves (कड़ी पत्ता) – a sprig
Onion, small (प्याज़) – 1 no
Turmeric (हल्दी) – ½ tsp
Potato, boiled & mashed (उबला आलू) – 1½ cups
Salt (नमक)- to taste
Coriander, chopped (ताज़ा धनिया) – handful

In a mixing bowl, combine semolina, curd, and salt. Mix well. Gradually add water to make a smooth batter. Set aside. Heat oil in a pan. Add mustard seeds and let them splutter. Add asafoetida, chopped ginger, and curry leaves. Sauté for a minute. Pour this tempering over the prepared semolina batter. Also, add chopped coriander and mix well. Finally, add baking soda and mix gently. Set aside. |

For the potato filling, heat oil in a pan. Add dry red chillies, mustard seeds, urad dal, chana dal, and cumin seeds. Sauté until the dals turn golden brown. Add chopped green chillies, ginger, and curry leaves. Sauté for a minute. Add finely chopped onion and cook until translucent. Add turmeric powder and mix well. Add boiled and mashed potatoes, salt to taste, and chopped coriander. Mix until well combined. Remove from heat and let it cool completely. |

Heat a tawa (griddle) over medium heat and grease it with oil. Pour a ladleful of the prepared semolina batter onto the tawa and spread it evenly to form a thick circle. Allow it to cook for a minute. Place a portion of the prepared stuffing in the center of the semolina circle. |
