Ingredients
Turai, medium (तोरी) – 8 nos/ 500 gms
Onion, medium (प्याज़) – 3 nos
Mustard oil (सरसों तेल) – 5 tbsp
Amritsari Wadi, large (अमृतसरी वड़ी) – 1 no
Mustard seeds (सरसों दाना) – 1 tsp
Cumin (जीरा) – 1 tsp
Saunf (सौंफ़) – 1 tsp
Garlic, chopped (लहसुन) – 2 tsp
Ginger, chopped (अदरक) – 2 tsp
Green chilli, slit (हरि मिर्च) – 2 nos
Tomato, medium (टमाटर) – 6 nos
Salt (नमक) – to taste
Turmeric (हल्दी) – 1 tsp
Chilli powder (लाल मिर्च पाउडर) – 2 tsp
Coriander powder (धनिया पाउडर) – 1 tbsp
Garam Masala (गरम मसाला) – a pinch
Kasoori methi powder (कसूरी मेथी) – a pinch
Coriander, chopped (ताज़ा धनिया) – handful

To prepare Turai Ki Sabji, start by washing and peeling the turai. Then, cut them into medium-sized pieces and set them aside. In a pan, heat mustard oil over medium heat. Break the Amritsari Wadi into small pieces and shallow fry them in the oil. Take them out and add mustard seeds, cumin seeds, and saunf. Let them splutter for a few seconds. |

Now, add roughly chopped onions to the pan and cook until they become translucent and slightly browned. Next, add chopped garlic, chopped ginger, and slit green chilies to the pan. Sauté them until they turn golden brown and aromatic. Once the onions are cooked, add turmeric, red chilli powder, coriander powder and salt. Now, add tomato puree to the pan along with salt and turmeric powder. Stir well and cook until the tomatoes are cooked. |

Finally, sprinkle kasoori methi powder and chopped coriander over the sabji. Stir gently and cook for another 2-3 minutes to allow the flavors to meld together. Once done, turn off the heat and transfer the Turai Ki Sabji to a serving dish. Garnish with additional chopped coriander leaves if desired. Serve hot Turai Ki Sabji with roti, paratha, or rice for a delicious and nutritious meal! |
