To prepare the croutons simply mix together garlic with olive oil and drizzle over the bread. Place the bread on a baking tray and slow toast them at 100c for 15-20mins. |

For the caesar dressing mix together all the ingredients in a blender and blend them till they emulsify and mix together to become a homogenous dressing. If the dressing is too thick then you can lighten it up a little with some more olive oil. You can prepare this dressing and keep in the fridge easily for a month. |

Before you assemble the salad make sure the romaine lettuce is properly washed, spin dried and chilled in a fridge. If you do not get romaine lettuce then you may use iceberg or leafy lettuce as well. |

To assemble the salad simply arrange the washed and dried romain lettuce leaves on to a platter and drizzle liberally with the caesar dressing. Garnish with parmesan cheese shavings and serve. |
